yes, kale is wonderfully nutritious. I agree.
But, can we please take a break from the worshipping - please! It's making us look a little...fickle.
In fact, I know a few other wonderfully nutritious friends that feel overlooked as we reduce our diets to kale brownies, kale smoothies, kale chips, kale butter, kale cakes, kale pesto, smoked kale, and kale cereal.
And, until we got bored and needed something new to fuel our nutritionally attention-distracted disorder, kale was used to line grocery store display cases for every other fresh fish or food item. It's tough, bitter, and when you boil it for a hour, it does soften a bit. (chop it or julienne it for best raw results...and to go easiest on your jaw)
Don't even get me started on quinoa!
I've already heard from blueberries, plums, apples, sweet potatoes, red peppers, yellow peppers, raspberries, brown rice, corn, romaine, spinach and broccoli...so far.
They think we're suffering from nutrient insanity.
